Deleware: Two oysters come from this area. The Cape Shore oysters are briny, with a sweet, nutty astringency. The “inner bay” oysters are a milder, both with plump, firm meat.
Imperial Eagle: West Coast variety with influences from ocean bay and fresh mountain spring waters. Flavorful with a slight cucumber finish.
